Easy gluten-free chicken goujons

Gluten-free chicken goujons can be made easily at home by substituting the breadcrumbs for organic polenta (dried ground maize). Dip your chicken pieces in egg and then coat in the polenta. Fry or bake with a drizzle of vegetable oil of your choice.  These are a yummy home-cooked gluten-free alternative.

These goujons are an easy tea to prepare, especially if you have just come in from work and need a quick meal for the kids. You could also try making a larger batch and putting some in the freezer, so you always have an easy gluten-free home-cooked meal available. As an alternative, you could try the Orgran range of crumbs (a great store-cupboard line). Orgran All Purpose Rice Crumbs, for example, are ideal for all crumbing applications of meat, fish and vegetables. They can also be used in sausages, added to sausage meats, or used as a stuffing base to which you add your own herbs. They’re ideal as a thickener in soups and casseroles too.

We stock a variety of organic polentas at Naturally Good Food; once you have some in the cupboard, they make a very easy part of a meal. To prepare polenta on its own, bring 1 litre of water to the boil. Add 250g polenta and simmer for 5 minutes. Remove from the heat, cover with a lid and leave to stand for 10 minutes. Pour the cooked polenta into a greased dish and spread to allow it to cool. Once cooled, cut it into slices and fry with a little butter. Serve with cheese and Biona’s Organic Toscana Sauce.
