Teff bread

Here’s a useful gluten-free bread recipe for a breadmaker, using teff flour for a change.

Teff is gluten-free and comes packed as white and brown. These are nutritionally just the same, but the bread will look different depending which you choose.

Ingredients

Method for breadmakers with a gluten-free programme:
1 Make sure that all ingredients are at room temperature.
2 Put all the ingredients in the machine in the order listed above.
3 Mix the xanthan gum and the teff flour well, to prevent sticking.
4 Set the machine on the gluten-free programme.
5 Take the bread out of the machine.

Method for breadmakers without a gluten-free programme:
1 Make sure that all the ingredients are at room temperature.
2 Put all the ingredients in the machine in the order listed above.
3 Mix the xanthan gum and the teff flour well, to prevent sticking.
4 Set the machine to knead and rise (i.e., a dough setting).
5 Let the machine knead for 15 minutes and turn it off. Let it rest for 20-30 minutes, so that the dough can rise slightly.
6 Set the machine to bake (this takes about 1 hour, with the height of bread between 10 and 11 cm).
