Gluten-free apple cake recipe
This is an easy recipe and can be made with either gluten free flour or wheat flour. Dust with cinnamon and sugar or finish off with icing sugar mixed with lemon juice.
Line a 8-9” tin, or 9 shallow muffin tray.
Rub the cinnamon and butter into the flour to the breadcrumb stage.
Stir in the sugar and add liquid to make a sticky dough.
Mix in the apple and raisins.
Put into tins and bake at 150C/ 300F / gas mark 2 for 40 minutes for a large cake, 30 mins for the individual ones.
You can sprinkle brown sugar on top before cooking, or ice them once cool with icing sugar mixed with a little apple juice or lemon juice.
Include a few raisins for an interesting texture too.
