It can sometimes be hard to find a bean ‘n bacon soup that isn’t tomatoe-y. This one allows the wonderfully creamy flavour of the beans to shine through. It’s just the thing for a dreary, misty, autumnal day.
340g smoked bacon, chopped
1 tbsp olive oil
1 knob butter
1 onion, diced
2 carrots, diced
2 stalks of celery, diced
2 cloves garlic, crushed
400g tin white beans (or equivalent dried and cooked)
1 ltr chicken stock
Salt, pepper and dried thyme to taste
Parsley and lemon juice to garnish
Heat the olive oil and butter and saute the bacon, onion, carrots, celery and garlic. When melted down to a good base, add the white beans, stock and seasoning. Cook for about 40 minutes. At the end, mash some of the beans with a fork or potato masher to thicken the stew, then check the seasoning, and garnish.
This soup looks especially good served in lovely little pots, with some crispy bacon on top!Tags: haricot beans, Recipe, white beans
