Another great bread recipe – this time, a sweeter one – for those following paleo diets. You may not be eating grains, but you can still get yourself a tasty teatime slice from this. Click on the links to see the ingredients available from Naturally Good Food.
65g tapioca flour
½ tsp baking powder
½ tsp bicarbonate of soda
Pinch sea salt
180g almond nut butter
3 tbsp coconut oil (in liquid form)
180g fresh pumpkin
1 tbsp lemon juice
1 tbsp vanilla extract
Mix the flour, spices, baking powder, bicarbonate of soda and salt in one bowl.
Separately, mix the almond butter, eggs, maple syrup, coconut oil, lemon juice and vanilla. Add the contents of the first bowl to the second.
Place in an oiled loaf tin and bake at 180C for around 45 minutes, until a skewer comes out clean.Tags: almond nut butter, baking powder, bicarbonate of soda, cinnamon, Coconut Oil, ground ginger, honey, lemon juice, maple syrup, nutmeg, paleo, sea salt, tapioca flour, vanilla extract
