Feeling like some raw affection on Valentine’s Day? Or just feeling a bit raw about the whole thing? Or a bit Rrroooar about someone or other?!
Well, borrowed from the Raw Health company’s website, here’s their recipe for Raw Velvet Lemon Vanilla Chocolate Hearts (originally taken from Victoria at www.littleguru.co.uk). Ingredients, where highlighted, available from Naturally Good Food. They look lovely!
Ingredients and method
Mix together the following ingredients:
2 tbsp cocoa powder
2 tbsp beetroot powder (if you can’t find this – and it is rather obscure, then bear in mind that it’s being used here for the red colouring. Anything else that will give this colouring is fine – you could even do without it. We’d recommend red food colouring)
1 cup raisins
5 tbsp Biona coconut palm sugar (this gives an amazing taste – don’t be tempted to substitute with ordinary sugar)
2 tbsp chia seeds
9 tbsp cocoa butter
5 tbsp water obtained from soaking the dates used in Layer 2
Use a cake mould or biscuit-cutter to shape into hearts. Put in the freezer to harden slightly while you make Layer 2.
Layer 2: Pink Lemon Cream
Put the dates in the blender with:
1 tbsp peanut or other nut butter
2 tbsp beetroot powder (see note above)
Arrange this layer on top of the base and put back in the freezer while you make the topping.
Layer 3: Chocolate Topping
2 tbsp cocoa powder
2 tbsp acacia honey
2 tbsp lucuma (a natural sweetener, which we have just started stocking)
1 tbsp lecithin
Blend all of these ingredients and then pour the mixture onto the second layer. Put back in the freezer for a few minutes, then bring out to decorate. Raw Health suggest some edible gold powder and coconut sugar crystals….
