Crazy Jack’s couscous salad recipe

We’re proud to stock the Crazy Jack range of herbs, spices, beans, lentils, seeds, nuts, dried fruit, syrups and grains! Here’s a great recipe, originally from Crazy Jack, using lots of their seeds and fresh ingredients. It makes a wonderful summer lunch.

Crazy jack cous Cous


200g couscous, cooked and cooled – simply pour boiling water over it to cover, and stir. Its done after about 10 minutes

2 or 3 spring onions, diced

1 or 2 fresh tomatoes, diced

½ cucumber, diced

Big bunch of coriander, mint, parsley or basil, chopped

Juice and zest of a lemon (should be unwaxed: if you prefer, you can use organic lemon juice instead)

1 tbsp each of pine nuts, pumpkin seeds and sunflower seeds

Extra-virgin olive oil


Mix the couscous with the spring onions, tomato, cucumber, herbs and seeds. Squeeze in the lemon juice and add some olive oil to taste. If extra seasoning is required, add that now.
