This is a quick and easy chocolate mousse recipe that doesn’t call for eggs or cream. It’s therefore suitable for vegans, those on dairy-free diets, and people who are desperately trying to conjure up a last-minute dessert with very little in their fridge. This is store-cupboard chocolate mousse and it’s great!
Based on an original recipe from Green & Blacks: serves 4.
200g dark chocolate
400ml tin coconut milk (gives the mousse a slight coconutty taste, but not overwhelming)
2 tbsp icing sugar (depending on taste, you may need more)
2 tsp vanilla extract
Gently melt the chocolate. Whip the coconut milk either by hand, or in a food processor. Add the icing sugar, vanilla extract and melted chocolate and whip again. Taste to see whether more sugar is required. Pour into serving glasses and chill till required (at least half an hour).Tags: coconut milk, dark chocolate, icing sugar, vanilla extract
