Japanese winter warmer recipe

This recipe, based on an original from Sanchi, cunningly mixes traditional British autumn produce with Japanese foodstuffs, giving a warming and unusual dish.


2 carrots, chopped

1 parsnip, chopped

1 leek, chopped

1 head of broccoli, chopped

1 block organic tofu, cut into cubes

Cooking oil

1 strip of Kombu sea vegetable

5g shiitake (rehydrated)

Teriyaki seasoning to taste

Chopped spring onions for garnish


Deep-fry the tofu cubes until golden. Meanwhile, bring to the boil three cups of water, along with the kombu strip, the shiitake and the soaking water from both these ingredients. Add the carrots and parsnip and simmer for 10 minutes, then add the rest of the vegetables and the tofu cubes for a further five minutes. Season and garnish to taste.
