Buckwheat Pancake Mix

With full instructions for making with eggs and milk, or without eggs and using an alternative milk, these are both really very easy to make. It only takes a few minutes to mix and cook a stack of lovely pancakes, for breakfast, afternoon tea or as a dessert at any meal.

Both mixes make quite a few pancakes if you use the whole pack, so why not split it and have a practice before Pancake Day? The full mix needs three eggs, so I sometimes carefully weigh out the mix into 3 portions and use a third of the rest of the ingredients.

The Buckwheat mix is very plain, but not at all bland, with a mild nutty flavour of buckwheat coming through – it has no salt or sweeteners at all, and can even be used as a savoury pancake.  It’s also fine for a low FODMAP diet.

The Apple and cinnamon has chopped apple as well as some fructose for sweetening, and with the cinnamon, has an irresistible aroma once cooking. Both go very well with a drizzle of Maple or Agave syrup (or see our blog on our top 10 pancake fillings).

Plain Flour and Self-Raising Flour

Orgran self Raising FlourOrgran Plain gluten free FlourIf you are more of a purist and would like to make your own pancakes from scratch, then try Orgran’s plain flour as a great starting point – you can also use the No Egg Egg replacer  for this if you need to.

Both the plain and self-raising gluten-free flours are really useful in baking – simply swap the ‘normal’ flour for the same weight of Orgran flour ( you may need a little more liquid in some recipes) and make as usual.

1 tsp Orgran Egg Replacer

2 tbsp water

1  1/4 cups plain flour

2 tsp baking powder

3/4 tsp salt

1 tbsp sugar

1 1/4 cups milk

3 tbsp oil


In a small bowl, beat the egg replacer with water until it peaks. Sift the flour, baking powder, salt and sugar together.

Stir in the milk and oil. Fold in the egg replacer. Bake as usual. For thinner pancakes, increase the milk as desired.

Makes 12 medium-size pancakes.
