A great, quick recipe that features Crazy Jack organic sultanas, which we’ve looked at in our blogs this week. Firm, fragrant and fruity, these pep up a last-minute meal wonderfully.
400ml vegetable stock
200g couscous (we stock the Crazy Jack wholewheat variety, which is a good option here)
Knob of butter
1 onion, chopped
1 tomato, chopped
1 carrot, chopped
1 red pepper, chopped
1 chunk of cucumber, chopped
1 handful Crazy Jack sultanas
Juice of ½ a lemon
2 tbsp olive oil
1 garlic clove, crushed
Pinch of salt
Fresh herbs to garnish, such as mint, basil or coriander
Cover the couscous with the vegetable stock, add the knob of butter, cover and leave for just over five minutes.
Mix the onion, tomato, carrot, cucumber, red pepper and sultanas.
Blend the lemon juice with the olive oil, crushed garlic and salt; stir this into the couscous, using a fork to fluff it all up.
Finally, stir in the vegetables, and garnish the dish.
Serve on its own or with grilled meat and vegetables.
