If ever a cake could be described as refreshing, it’s lemon drizzle cake. Deceptively ordinary-looking on the outside (although with a tell-tale glaze of sugar), it’s wonderfully moist and citrussy inside – and remarkably easy to make as well.
For the cake
Zest of 2 lemons
200g butter or margarine
3 eggs, beaten
200g self-raising flour
For the syrup
Juice of 4 lemons
Preheat the oven to 180C. Grease and line a cake tin.
Mix all the cake ingredients together well and spoon into the cake tin.
Bake for 35-40 minutes. While it bakes, add the syrup sugar to the lemon juice and stir well.
When the cake is done, remove from the oven. Prick all over with a skewer and drizzle the syrup over it.
Allow the cake to cool, then lift out of the tin and serve.
