These traditional Ancient Greek pancakes make use – appropriately – of our wonderful organic Greek currants, as well as honey and walnuts. They’re a great pancake recipe for anyone avoiding eggs and dairy.
150g plain flour
120ml olive oil
Pinch ground cinnamon
1 tbsp honey
50g toasted walnut pieces
Place the flour and salt in a bowl. Add the water and olive oil and whisk until you have a smooth, thin paste. Stir the currants through the mixture.
Ladle tablespoonfuls of the batter into an oiled frying pan and cook for a couple of minutes on each side over a medium heat. Garnish with the cinnamon, honey and walnuts.
And serve with some natural Greek yoghurt, perhaps?
