Marmalade sponge pudding recipe

Just the thing for Paddington – or for anyone on a cold, damp day. This pudding, based on an original recipe by Nigella Lawson, has a texture somewhat like that of a steamed pudding, but is much easier and quicker to make. Use one of our amazing organic marmalades for the pudding and the sauce.


250g butter or margarine

150g white sugar

Jar of marmalade

225g self-raising flour

4 eggs

Zest and juice of 1 orange


Preheat the oven to 180C and grease a baking dish. Reserve a spoonful of marmalade and half of the orange juice for the sauce, then mix all the other ingredients together. Spoon into the baking dish and bake for around 35 minutes, until a skewer comes out clean.

When ready to serve, gently heat the reserved marmalade and orange juice to make a sauce. You’ll probably want some custard or cream too.
