Simple almond biscuits recipe

This is a great recipe for using up any little odds and ends of ground almonds. It gives a distinctive almond flavour and texture – a little crumbly, rather like shortbread. You can decorate the biscuits with one or more whole (or flaked) almonds if you like, too.

Almond biscuit recipe: a lovely delicate taste

A great, slightly crumbly biscuit


175g self-raising flour

Pinch salt

75g sugar

50g ground almonds

150g butter or margarine

Tsp almond extract


Mix the flour, salt, sugar and ground almonds together, then rub in the fat. Mix in the almond extract and use your hands to form a sausage shape. From this, slice off rounds.

Place on a greased baking tray and bake for about 15 minutes at 180C.
