Why should pineapples get all the fun? It’s perfectly possible to cook other types of tinned fruit upside down! This recipe is incredibly easy and makes a lovely cake, with a gooey fruity base.
For the sponge
100g self-raising flour
100g butter or margarine
For the sauce
50g soft brown sugar
1 tin peach slices
Grease a tin and preheat the oven to 180C. Melt the butter and sugar for the sauce in a pan and pour into the tin. Arrange the peach slices in the sauce.
Mix the sponge ingredients together and spoon over the top of the peaches (it will spread as it cooks, so don’t worry if it’s a little uneven at this point).
Bake for about 30 minutes. Then, if your serving skills are up to the job, turn it out from the tin and serve upside-down!
