With the increase in Japanese cooking, seaweed is now part of many people's diets. As seaweed contains all the 14 minerals the body needs, it's great to add to your diet. However, many of the minerals are lost when you soak your seaweed - so instead of throwing away the soaking water, save it to use as a nutritious stock that is really tasty.
